"Ancient Grains Series - Kamut"

Kamut (pronounced Ka-moot) is an ancient Egyptian word for wheat. Kamut grain is an ancient relative of modern durum wheat originating thousands of years ago in the fertile crescent of the Old World which runs from Egypt to the Tigris-Euphrates valley. Egyptologists claim the root meaning of the word Kamut is “Soul of the Earth”.

This ancient grain has an intriguing tale of rediscovery after a long period of oblivion before returning to its rightful place in the modern world diet.

The story goes that following WWII a US airman claimed to have taken a handful of this grain from a stone box he found in a tomb near Dashare, Egypt. Thirty-six kernels of this grain were then given to a friend who mailed them to his father, who was a Montana wheat farmer. The farmer planted and harvested a small crop which he displayed as a novelty at his local fair.

Because of the legend that these giant grain kernels were taken from an Egyptian tomb, Kamut was dubbed “King Tut’s Wheat”. Unfortunately, once the novelty wore off, this new discovery was all but forgotten.

Then, in 1977 another Montana wheat farmer by the name of T. Mack Quinn obtained the last remaining jar of “King Tut’s Wheat”, who along with his agricultural scientist and plant biochemist son, Bob, soon discovered the great value of this unique ancient grain.

T. Mack Quinn and his son, Bob then spent the next decade propagating this superior grain and the Quinns coined the trade name “Kamut” and registered it as a trademark.

Like most ancient grains, Kamut is superior in both nutrition and taste and can easily be substituted for common wheat. Kamut is especially successful for those with common wheat allergies. For many wheat sensitive people, Kamut brand grain has become the wheat they can eat and has been named one of the ten best foods by whole foods author, David Goldbeck.

Kamut wheat has a rich, sweet, buttery flavor and contains 20-40% more protein than common wheat, plus a higher profile of amino acids, vitamins, minerals and lipids. As well, it is more easily digested than common wheat.

Kamut grows well in most regions where durum wheat is traditionally cultivated and because of its naturally sweet taste, no sugar is required to hide the subtle bitterness of most other wheats and whole wheat products which adds a rich, satisfying flavor to all your favorite recipes.

Nutritionally, when Kamut is compared to common wheat, it ranks higher in 8 out of 9 minerals and has been found to contain much more of the natural antioxidant selenium. Also, it is 30% higher in vitamin E. When it comes to protein, Kamut really excels, containing up to 40% more than the national average for wheat. Because of the higher percentage of lipids found in Kamut wheat, it can be described as a “high energy grain”.

Kamut brand wheat is an important new crop for sustainable agriculture. This grain has the ability to produce high quality wheat without artificial pesticides and fertilizers which makes it an excellent organic farming crop.

You can find Kamut brand wheat in cereals, breads, cookies, snacks, waffles, pancakes, bread mixes, and baked goods as well as in some prepared and frozen meals. Kamut brand bulgur and couscous are also popular in Europe.
